One Pot Chicken and Mushroom Orzo

Amazingly creamy orzo with juicy chicken, mushrooms and baby spinach. All made in one skillet, even the uncooked pasta!
The creamiest orzo with all the fix-ins and the juiciest, golden brown chicken thighs all made in one. single. pot.
It’s quite possibly the easiest dinner one can ask for, and you can easily substitute chicken breasts if dark meat is not your jam. (You know we love our boneless, skinless thighs!) Kale and/or arugula can also be substituted for the spinach. And if you hate mushrooms, you can omit them altogether. IT IS ALL GOOD.
Side note: I throw in extra mushrooms + spinach for myself to make sure I get in ALL my veggies because that creamy orzo goodness is just too good to pass up.
CAN I USE CHICKEN BREASTS?
Yes, chicken breasts can absolutely be used here but chicken thighs have more dark meat and a higher fat content which will yield juicier, more flavorful chicken.
I DON’T LIKE THYME. CAN I SUBSTITUTE SOMETHING ELSE?
Absolutely! You can substitute rosemary, oregano, Italian seasoning (dried or fresh!) or any other herb of your choosing. And because dried herbs are often more potent/concentrated than fresh herbs, you need less when using dry. The correct ratio is 1 tablespoon fresh herbs to 1 teaspoon dried herbs.
One Pot Chicken and Mushroom Orzo
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, halved
- 2 large shallots, diced
- 3 cloves garlic, minced
- 4 teaspoons chopped fresh thyme leaves
- 2 tablespoons all-purpose flour
- 3 cups chicken stock
- 1 ½ teaspoons Dijon mustard
- 1 cup orzo pasta
- 4 cups baby spinach
- ⅓ cup freshly grated Parmesan
- ¼ cup heavy cream
- 2 tablespoons chopped fresh parsley leaves
Instructions
- Season chicken with 3/4 teaspoon salt and 1/2 teaspoon pepper.
- Melt butter in a Dutch oven over medium heat. Working in batches, add chicken to the Dutch oven in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side; set aside.
- Add mushrooms and shallots, and cook, stirring occasionally, until tender, about 3-5 minutes. Stir in garlic and thyme until fragrant, about 1 minute.
- Whisk in flour until lightly browned, about 1 minute.
- Stir in chicken stock and Dijon, scraping any browned bits from the bottom of the Dutch oven. Stir in orzo; season with salt and pepper, to taste.
- Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 6 minutes. Stir in spinach, Parmesan and heavy cream until the spinach has wilted, about 3 minutes. Return chicken to the Dutch oven.
- Serve immediately, garnished with parsley.

I would give this five stars but something was off with the liquid and orzo. Wish I could post a photo. Best word – GLOPPY! The chicken and flavor of this dish are great but was there too much liquid? When I served it, it was almost soupy. Now that the leftovers have cooled down, it looks starchy. I wanted this to be ideal as tonight was a practice dinner. I had planned to double the recipe and cook for my book club next week but now, I don’t think I can. Delicious but not presentable.
My husband and I enjoyed the heck out of this recipe! Don’t over think it; there are lots of ways to tweak and still make it taste perfect. We especially enjoyed the addition of orzo, but I’m sure you can’t go wrong with other ingredients you have on hand. Thanks for sharing!
Can I substitute something else for heavy cream? Lactose intolerant.
Can I leave out the cream or is there a substitute for it in the reciple one pot chicken muchroom orzo
I leave the cream out, as I don’t feel the meal needs it but you can substitute with sour cream or greek yogurt, which will give it a slightly tangy flavor

Really delicious!! I used boneless chix breast (halved and pounded thin) about 4 lbs (I have big eaters!), so I used a mixture of butter and olive oil to brown it and added a little more of everything, i.e. 3 shallots, 4 garlic cloves, 2 tsp. dried thyme, 4 cups stock, 1 1/2 cups orzo, etc. I saw what the other reviewers wrote, so I also added some white wine to the mushrooms. The flavor was so good, it was easy to put together and I love one pot meals! Not one drop left!

Real comfort food. I used mom’s souffle dish. 1 pkg costco chicken thighs, fried on stove. Cooked pasta 30 min, then added asparagus and then browned chicken for additional 10 minutes. Cooked perfectly. So good, I will be making this again. Peas, bacon, spinach? So many possible variations!

I had defrosted chicken breast so used that, thought I had rocket , but had used it so used thinly sliced courgettes instead and I cannot get orzo in Spain so used rice instead!! I also changed thyme for tarragon as it is my husband’s favourite!! It was lovely and enough left over for lunch tomorrow!

I used Greek yogurt instead of heavy cream, olive oil instead of butter & my husband topped his with the parm so the dish was still dairy free. I also didn’t take the chicken out of the pan and let it all cook together which helped the chicken soak up the rest of the flavors imo. Also, my orzo took closer to 10 min

My boyfriend doesn’t like mustard so I subbed the dijon mustard for aged sherry vinegar and the dish had a perfect little kick to it. My only other change was swapping spinach for kale and using dried thyme instead of fresh. Delicious.

This was delicious. I substituted olive oil in place of butter, almond flour in place of flour, nonfat Greek yogurt in place of heavy cream, and left off the parm. My husband who can smell healthy alternatives from a mile away had no idea and commented about how delicious and flavorful this dish was. Kudos to the chef!
I just made this without mushrooms or shallots bc I didn’t have, I used on medium yellow onion. I used a fresh baby arugula & spinach blend. This was absolutely delicious. I also used oat milk instead of half & half and it still came so rich and creamy. It was so fast and the flavors blended so well.

Our guests loved it, so did we. The only addition: used some fresh lemon juice when sautéing mushrooms … added just a wee bit of piquancy …
Used both thighs (boneless) and chicken tenders (Trader Joe’s).
It took a little longer for the orzo to cook, so I just added more broth as the orzo softened …

My husband was gushing about it and quickly pronounced this dish as his absolute favorite one of all the dishes I’ve ever made for him. He even got seconds and said I should make this again. My brother also had seconds, and he said he wished he had space for thirds. My almost 3 year old daughter liked it so much, she started to feed herself. I did substitute white onion instead of shallots since I already had half a white onion I needed to use and whole milk and butter instead of heavy cream. I also added in more orzo and spinach since we love it. Will definitely add this to the rotation.
Super tasty and saucy – added a ton more mushrooms/onions, kale instead of spinach, dried thyme instead of fresh, and rotini instead of orzo. Orzo probably would have made it even better, just couldn’t get any at the store.

I followed the instructions to a “T” and it came out perfect! I’m so impressed with this dish… I’m going to have to keep in it my back pocket for times I have last minute gatherings. Minimal prep, timing suggestions of the recipe are spot on, and all done in 1 pan. Would be perfect serving size for a group of 4. Might add a splash of cooking sherry for funzies next time 🙂

I just made this as a 1.5 batch and it was more than enough for 6 people. I used an entire pound of mushrooms (double the recipe Amy) and I’m glad I didn’t use less.

Just tried this for dinner last night and it was a huge success! Directions very easy and straightforward. Use chicken breasts instead of thighs because that’s what I had on hand. I just cut them in half. I agree with your note to double the mushrooms and spinach, but not sure I have a pan big enough for all that spinach! Husband and son LOVED it. This was amazing! I used broccoli instead of spinach as that’s what I had. Took a little longer to cook the broccoli but the crunch was a nice contrast to the creaminess of the rest of the dish.

This dish is very tasty. I used a large stainless steel skillet and my chicken thighs stuck to the pan, even with the butter, and didn’t brown very well, Not sure what happened.
This was really delicious and easy. Mine ended up almost like a risotto, except without the extra effort of a half hour of continuous stirring 😉 Only changes was chopping the mushrooms a bit more and substituting chicken breast. Thanks for a great recipe!

Absolutely delicious! Only a couple of minor changes here. Mushrooms were very large so I thickly sliced. Covered the pan while sautéing mushrooms and shallots. Deglazed the pan with a touch of Sherry before adding flour. Added a few sliced black mushrooms with the Parmesan cheese and spinach. Finally sliced the sautéed chicken thighs thickly on the bias before returning to the skillet. Yes, do pay attention while orzo is cooking. I actually ran a spatula upside down along the pan several times during time the orzo was cooking. Low simmer for cooking the orzo please, no boiling.

O-M-G I have been wanting to make this for a while and so glad I did. I did use thighs instead of breasts. My husband always watches his portions and he had seconds! The orzo mix is good enough to eat just as a side. Thank you for all your wonderful recipes.
Just made this tonight with a bunch of changes based on allergies and product availability, and it was still so, so, SO GOOD. Those asking about the cream and parm, I’m allergic to dairy to I used non-dairy butter and omitted the cream and parmesan altogether and it was still an extremely decadent and creamy dish. I used 1.5 cups orzo like others suggested but ended up adding more chicken broth to get the orzo to the tenderness we like, so next time I will use the 1c as specified in the recipe. I used chicken breasts because that’s what I had, cut them to half the thickness so ended up with 6 cutlets that were easy and quick to brown. I put them in a small baking dish in the toaster oven on the “warm” setting to keep warm while the rest cooked. I subbed yellow onions for shallots and dried thyme (from fresh, not the powdered kind, although I’m sure that’d work fine in a smaller quantity) for fresh based on what I had on hand. Lastly, I used white button mushrooms quartered because they were each the size of my hand. This was still an amazing dish, easy, and came together fairly quickly. My ONLY complaint is about the orzo sticking to the bottom. I scraped the bottom with a wooden spoon as it cooked, but it still stuck, and that was on pretty low heat (just at a low simmer). My husband asked for a kiss after and said “That was soooo good!” in a kind of sing-songy voice, so yeah. Make this, even if you can’t make it to the letter 🙂 I think I might even sub 1/4 or 1/2 cup of white wine for part of the chicken broth next time, just to really kick up the decadence 😀

This was amazing. The orzo was so rich and creamy and I loved having the spinach in there. Will be making again!
My goodness-I made this for the first time and it was AMAZING
The flavors of this dish were very good. However, it took much longer to come together than expected. Possibly our chicken thighs were thicker, which took longer.
The orzo took longer to cook than 6 minutes and more liquid was needed to get the pasta cooked. The orzo was lost in the thick sauce.
Next time, I would try it with thin chicken breasts, which I will cook through and slice before adding at the end. I would try reducing the amount of flour to get a less thick sauce or add more cream. Finally, I would try a thin spaghetti, which may make more of a prescence.

This recipe far exceeded my expectations! I made some substitutions as I was trying to use up extra ingredients I already had — sliced chicken breast instead of thighs, red onions instead of shallots, avocado oil instead of butter, dried thyme not fresh, whole wheat flour, brown jasmine rice instead of orzo, arugula instead of spinach, whole milk instead of heavy cream, and I added a squeeze of lemon. Also accidentally used a big dollop of the Dijon, but I think it worked! Very good and very malleable.

Another fantastic, easy-to-make one pot dish, yay! Added extra spinach and mushrooms per author recommendation, also added some Italian seasoning to the chicken in addition to S&P which I saw in a review, and my own personal preference modifications were to add a sprinkling of red pepper flakes, and of course extra parm cheese on top when serving! I’m sure the recipe is perfect as written too, this one’s a keeper.
I’ve had this recipe on my to-do list since it was posted and it was worth the wait! A new delicious staple in our house. It was a little soupy but it thickened as it cooled. I’d love to see serving size recommendations as well in the future if that’s possible!

Loved this dish. Great recipe! I took it to a new mom. Everyone raved. I did season chicken with garlic powder and oregano. Added extra mustard at end. Watch closely as it does tend to stick and burn. Next time I may add asparagus and sound dried tomatoes.
Just made this today and it was delicious. I had never made orzo pasta before and it was so creamy and delicious. I did add extra mushrooms and spinach because I like a lot of veggies.

The entire family loves this recipe and that’s saying a lot when I have very picky eaters. How can you not love this recipe? It’s creamy and it’s all in one pot!
This was delicious! I made a couple of small additions after reading the reviews. I used boneless, skinless breasts instead of thighs and they needed additonal cooking time. I seasoned the chicken with salt, pepper and italian seasonings before browning. After adding the broth and dijon, I put the chicken back into the pan, covered the pan and cooked on medium low for 10 minutes before adding the 0rzo. I added a tsp of hot sauce into the broth and squeezed 1/2 lemon over the top before serving. I used both shitake and baby bellas..I will defintely make this again!
I made this and the flavor was very good. I did however have a hard time getting the orzo to cook in the same pan and it ended up sticking and burning. If I made it again I would definitely cook the orzo separate and pour the sauce/chicken over it. Overall,
though it was a great recipe.

I’ve made this twice now. The second time I followed the instructions for seasoning the chicken (I didn’t use enough the first time). I also finished the chicken in the oven (425, about 20 minutes) while I cooked everything else, which was much easier/quicker, since my stove is *the worst*. Delicious! I love all of the ingredients and there’s nothing better than being able to put the pasta in uncooked. Next time I might try it with broccoli, and I’ll make it for my son’s vegetarian girlfriend minus the chicken. Yummy.
Made this tonight and agree with the below commenter who said “restaurant quality” – it is! And this recipe is stunning even before the Parmesan and cream, so I used a bit less of both. Only note, I let my orzo simmer for closer to 8 minutes – came out perfect and made me understand the 3 cups of stock. Overall delicious and very filling.

I made this last night. I used arugula, 2% milk, Penzeys seasoned salt and Penzeys ground black pepper. With so much liquid, I had to add an additional 1/2 cup (by weight, 3 oz.) orzo. As with most one-pot dishes with orzo, the orzo gets lost…thus, the 4 stars. I would make this again (very tasty) but use a larger pasta.

I was really excited to make this for the family today. Maybe I didn’t season the chicken with enough S&P but the chicken did not come out very good and too cold by the time I had the orzo ready. The orzo and veggies did come out really well though, and I kicked back the chicken stock and did add more orzo (1 1/4 cups) so that it wouldn’t be so liquify. Overall a good dish but would probably grill the chicken like Chungah did in here IG video for better flavor.

I made this for dinner last night and my husband and I loved it! He said it tasted like something from a restaurant and said it was delicious quite a few times. I added a bit more orzo (I used 1.25 cups) and it still turned out fine. Thank you for the recipe!
Whole family loved it- even my little kids who typically refuse mushrooms. My husband was wowed, although he usually dislikes “one pot” dishes. This is a keeper!
Overall I liked this. I did find it too salty. I left out the salt on the chicken knowing that I’m salt sensitive. Maybe low sodium stock would help.
I loved this recipe! It’s really simple to put together. I’ve tried a few recipes where the “one pot” pasta dish came out way too starchy but following this recipe, it rendered a great dish that wasn’t too starchy. I also put some cherry tomatoes in the dish, which added great colour. I ended up also using cooking cream (which is 20% fat) but using about 250mL, which still made this a great dish.
My whole family loved it! Chicken took a little longer to cook than recipe states. No shallots, used sweet onion. Used 1.5 cups orzo. Definitely make again.
Is there a substitute that can be used for the mayonnaise?
Made this tonight and it turned out so good. I used 2 cups of chicken stock, as I thought it was going to be to liqudy, and it was a perfect amount for me. I m not a big fan of thyme so I left it out and used more parsley. I also shook a bit of paprika on top of the chicken pieces.

This was delicious! It took a little longer than I expected for the chicken to cook. Once you factor in both sides and cooking in batches, it ends up being over 20 minutes for all the chicken, but it was worth the longer than expected cooking time. The orzo and mushrooms are so creamy and delicious; I could eat that alone as a meal!
I made this with frozen sliced mixed mushrooms (white, cremini, shitake, portabello) and half of a yellow onion because 1) I forgot the shallots [insert facepalm] and 2) I really wanted the mushrooms to be organic and that was all I could find. I wasn’t sure it was going to work out b/c the frozen mushrooms created a lot of liquid and basically deglazed the pan earlier than I think was intended. Regardless, the flavor ended up being stunning! I LOVED that this recipe uses a lot less dairy than I’ve seen in similar recipes. It created a creaminess without creating so much weight in our stomachs. Also, the flavor was stunning before the dairy, so really you could make it without the cream and Parmesan, if you wanted to. The spinach ended up a bit slimy, so I might try some dinosaur kale next time to keep that green flavor without that texture. That’s the only reason I gave this four stars instead of five. On the whole I’m thrilled with this recipe. Thank you so much for sharing it!!
This is a “restaurant quality” meal. Absolutely delicious, and I love it only uses one pan!

Excellent recipe!! Made it tonight for my family for the first time. Absolutely delicious! If you don’t have heavy cream on hand, it’s ok, it’s a beautiful brown sauce without it. I tried it with, next time I may omit. I was nervous about adding the spinach…so glad I did! Made the dish come alive! So many wonderful flavors. I love all the recipes on DD website.
Great dish! My family loved it, despite my children refusing to eat mushrooms. Made like a umami risotto-ish dish. My husband asked for it to go in rotation.

I have to laugh at the comment about not using any more chicken thighs. Any time I find a recipe with chicken breast, I automatically switch it to the thigh because that’s what I like or move on to find another recipe I like. Many substitutions can be made for dish like this, even the pasta and veggies. I used broccoli and carrots because I did have enough spinach. I added more orzo like some people recommended. My husband and I thought this was delicious and will make it again regularly.

Loved this dish. Definitely going to be in rotation throughout the fall and winter at our house. My only thought/note is it felt a bit salty. I followed the measurements to a T (at least I sure think I did). Only thought is to pull back the broth a bit. Regardless, SO good. So satisfying. An excellent way to blend orzo, chicken, and veggies. Chungah, you are simply the best.

Made this last night and very flavourful & delicious! I prefer a little bit more sauce so just added another cup of stock I had on hand as well as 1/2 c. half & half instead of 1/4 c. heavy cream and was very happy & pleased with the dish. Could have added a bit more orzo but wasn’t a deal-breaker. Was super easy and like others, was really happy had leftovers for lunch the next day 🙂 Thank you for sharing these amazing recipes; I always look at your blog first when I am in need of some “inspiration” and am never disappointed…keep them coming!

The chicken took a while for me to cook, but then everything went together quickly after that. I lined up & measured all the ingredients as I was letting the chicken cook. SO flipping good! This recipe just ticked all the boxes for me. Relatively healthy (not a canned soup), savory, flavorful, lots of protein (I work out & so I doubled the chicken) and veggies! I added a salad. Now I have leftovers that I am so excited about. LOL. Love your recipes & your website!

Quick and easy. Needs more orzo. Not enough for a side dish. Used chicken breast and split them to cut down cook time. A simple recipe that you can add whatever vegetables you like. I added chopped tomatoes and basil.

Haven’t tried yet, but this recipe Sounds & looks delicious, what could you suggest to sub for the mushrooms? We both aren’t mushroom eaters.
I live in a small condo and tend not to keep a lot of less common ingredients, like orzo.
Would it be possible to substitute rice? If so, would you recommend Arborio, long grain white, or medium grain brown? Those are the ones I routinely have.
Orzo and rice are not the same thing at all. Orzo is pasta, usually made from wheat. You can make something similar with rice but the liquid requirements and the timing are different. Look up Chix and rice or arroz can pollo recipes for comparison.
Kelly Am, you can easily use fettuccini or linguini noodles as a substitute. Just cut them down into ¼ inch – ½ inch pieces. Good luck if you try it. I’ll be making the recipe tonight.

PJ, if you are a regular here, then you would know that ANY recipe can easily have substitutions…chicken thighs can, for the most part, be swapped for breasts but you would just need to consider the meat wouldn’t be as tender as the thighs but easily substituted OR, try another protein of your choice! To Jana’s point, you are not the only one on this blog…we all enjoy different things, hence, substitutions and experimentation are a great way to make a recipe our own!

If they were out of chicken thighs – or if for some reason I was suddenly overwhelmed with hatred for them – I guess any half-decent cook wouldn’t be hard pressed to replace them with chicken breasts or drumsticks or steaks or duck or salmon with just a little thought/experimentation. 😉

This is for Elaine – I’m also gluten free. I found GF orzo that works well in place of regular orzo. It’s Delallo brand and so far I haven’t found an orzo recipe it hasn’t worked with. Although I haven’t tried this one, I will very soon.

This is easy and yummy. I used unsalted chicken stock and would not use any additional salt except for seasoning the chicken before cooking. End result was about too salty for my taste. I would also use milk instead of heavy cream….it’s creamy enough. I’ll be sharing this and will make it again. This is definitely a recipe that you can play around with to suit your palette.

You can buy lactose free whipping cream!!! (or at least you can in Canada)
