Quick and Easy Roasted Veggie Kebabs

Ingredients

  • 1 green bell pepper cut into large chunks
  • 1 zucchini squash cut into large chunks, optional yellow squash
  • 1 red onion cut into large chunks
  • 2 cups grape or cherry tomatoes
  • 2 cups button mushrooms
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 cloves garlic minced
  • 1/4 teaspoon dried ground thyme

Instructions

  • Preheat oven to 425 degrees. Line a baking sheet with foil and set aside.
  • On skewers, place one piece of the bell pepper, one piece of zucchini, one piece of red onion, one tomato, and one mushroom. Repeat until the skewer is full. Lay each complete skewer on the baking sheet.
  • In a small bowl, combine the olive oil, basil, oregano, garlic, and thyme. Brush each skewer with the olive oil mixture on all sides.
  • Bake the skewers for about 8 minutes. Remove from the oven and turn over. Bake for an additional 5 to 6 minutes. Serve hot.

Notes

TIP: For extra flavor, grill the skewers for a summery taste.

    1. Betty, White chicken is fine. Regarding the cooking time, add another 5 minutes then check to make sure it’s done. Add additional minutes as need to ensure the chicken is cooked through and tender.
