Homemade Peach Pie

Now is the time to purchase fresh local peaches from your farmer’s market! I was able to get Red Haven peaches from a local roadside peach stand. I have been buying from this farm for over twenty years. I love their Red Haven peaches which are some of the best for eating and baking. I love this time of the year when the fruit is at its best!

I purchased a pre-made frozen pie dough for this pie. (Hey, it’s SIMPLE Artistic Cooking!) My Mom makes the best pies and always makes her own dough. Next time I will make homemade with her recipe. Pies are easy to make and always taste great. Add a little French vanilla ice-cream to make it even better!

 

 

 

 

Ingredients

• 2/3 cup sugar

• 1/3 cup all-purpose flour

• 1/4 teaspoon ground cinnamon

• 5 to 5 1/2 cups peeled and sliced fresh peaches (5 to 6 medium)

• 1 teaspoon lemon juice

• 1 egg

• 1/2 Tbs. water

• 1 package frozen pie crusts

 

 

Directions

1. Place cookie sheet on middle oven rack. Heat oven to 400°F.

2. In a large bowl, mix sugar, flour, and cinnamon. Stir in the peaches and lemon juice.

3. Lightly grease the pie plate with butter, and shape the crust into the pie dish. Crimp the edges.

4. Pour the peach mixture into the pan, and evenly distribute it to the edges of the pie dish.

5. Cover the pie with the second sheet of dough and slit the top. I made 1/2” lattice. Crimp edges.

6. Whisk together egg and water and brush egg wash mixture on the edges and top. Sprinkle with sugar. I used pure cane sugar.

6. Bake on a cookie sheet for about 40-45 minutes or until the crust is golden brown and the juice begins to bubble. Keep an eye on the pie. It can brown quickly! Cover the top with foil if you think it is getting too brown.

7. Remove from the oven and let cool for at least 1 hour before serving.

 

Wow! This pie was awesome! It did not last long! I liked the cane sugar on top as well as the ice-cream. The pie was still warm, and the ice cream slowly melted over the top. Yum, I will make more of these for sure. Give it a try. It’s a perfect late summer dessert.
