GULAB JAMUN



INGREDIENTS (Makes 8-10)

Milk powder(full fat)-8 tblsp.
Plain flour/Maida-4 tblsp.
Baking soda-1/2 tsp.
Yogurt-2 tblsp.
Oil-for frying as reqd.
Sugar-2 cups
Water-1 Cup
Green Cardamom(whole)-3-4
Rose water-1 tblsp.(optional)
Saffron-few strands(optional)
Cashew nut/pistachio-for decoration


METHOD

1.Make the sugar syrup by boiling together water,sugar,cardamom,rose water and saffron strand till the sugar completely dissolves and then keep aside.

2.Mix/sieve milk powder, plain flour and baking soda together.Slowly add yogurt and combine to get a sticky dough.

3.Make small balls from the dough by rubbing your hands with a little oil.

4.Heat a oil to medium-low for deep frying the balls. Fry balls 3 at a time in the oil and keep on turning to get an even colour on all sides.

5.Fry till it is golden brown colour and drain on a kitchen tissue.

6.Simmer these balls in the sugar syrup prepared earlier for 10 minutes. It would double in size. Serve hot or cold preferably with a dollop of ice cream and Enjoy!!!

ADDITIONAL TIPS:

1. If you find the balls too sticky to handle add a bit of milk powder but not too much to make the dough dry. Otherwise after frying balls will be too hard.

2. Take care that the oil is not too hot otherwise you risk the balls from turning brown too soon before it gets cooked inside.

3. After simmering for 10 minutes in the sugar syrup break one and see if its soft all the way through. If in the center it does not look soft, then simmer for another 5 minutes.
