JALEBIS / JILEBIS (KERALA STYLE)


Traditional jalebis are prepared using All-purpose Flour and yogurt, but we've replaced it with urad dal in this recipe for a healthier version .


INGREDIENTS (Makes 40 aprrox.)
For the batter:
Urad dal-1 cup
Water-1/2 cup
Yellow colour-4 drops(or use turmeric powder)
Oil-to fry

For the sugar syrup:
Water-1 1/4 cups
Sugar-2 cups
Rose water-1 tblsp.
Salt-small pinch
Saffron-a pinch(optional)


METHOD

1. Soak urad dal for a minimum of 2 hours.

2.Grind the urad dal with 1/2 cup of water and add colour and mix well.

3.In a saucepan, boil sugar and water to make sugar syrup.

4.When it starts to thicken slightly add rosewater, salt and saffron and keep the flame on low throughout to put fried jalebis into it.

5.Fill dough in a ziploc bag and cut a small hole in the corner to squeeze out batter or use an icing bag or ketchup bottle.

6.In a frying pan, heat oil to medium-high. Squeeze batter in hot oil in small circular motion starting from outside and ending in the middle.

7.Fry jalebis very crisp, slightly golden brown in colour and immediately add to warm sugar syrup.

8.Let jalebis soak for about 5 minutes and then place on a plate.


Additional notes

1.While making sugar syrup, take care that its not of thread consistency,if it reaches that stage add required water to make it a bit loose.

2.Keep sugar syrup on very low heat and put fried jalebis directly into it.

3.While frying, make sure the oil is hot and jalebis turns out very crisp, this is important otherwise you will end up with a soggy jalebi.
