Eggless Nutella Brownie Shortbread Bars

I actually had other plans for the second post for the theme, “Bring Some Brownies” for this week of Blogging Marathon #102. I was in fact planning to make some gluten free brownies with rice flour, since I have been intrigued by it for quite some time. But then the plan was not supposed to pan out as such, I suppose….

 

Ever since I had baked the Brookies, I wanted to try an eggless version. I mean it always helps to have options all the time, right? 🙂 During the similar time, my head was telling me to bake some Nutella brownies for the girls. Somehow, what happened is that both my thoughts amalgamated into one bake, and that is what I am going to post today. 🙂

 

Last Saturday, we had a lovely time at Fajee’s house. It had been long since we had all met up and we wanted to make it through before everybody gets into their summer routines. I was really not sure of making it, but Alhamdulillah, I did land up in her house along with Jaleelakka, which was already occupied by Zerin, Priya, Prema and Faseela. We were actually in a quandry whether to carry anything to her house, but I guess all of us baked or made something so that her family could enjoy.

I actually started by deciding to bake a normal eggless brownie on top of the shortbread base. Now shortbread are buttery cookies that do not use any leavening agent and is made with just three ingredients. Once I mixed up the base and pressed it on my lined pan, I pushed it into the oven and got to making my brownie base. That is when I decided, “Why not add Nutella into my brownie?” So I tweaked the recipe I was following and was really worried of a failure. I am still not confident when it comes to baking something new, especially when you need to carry it with you. I muttered a small prayer and pushed the batter into the oven and Alhamdulillah, the result is up for you to see. 🙂

 

Coming back to the meetup, we had such a lovely time chatting and munching on the sandwiches, pakodas and bhajis that Fajee so lovingly made for us. Our chatting partly included talking about the men in our life and by Lord, how much they are similar to each other! Let us not get into that matter, I may need another blog post, hehe… We are already planning our next little meet up with those who will  be here during this summer month, InShaAllah…

 

As I reached home, I received a message from Fajee thanking for the brookies and mentioning that she ended up eating half of it. I am not surprised. They were totally delicious. Totally buttery, rich and decadent… While lifting it from the pan, the bake slid off and broke in the middle, so my girls had more than just the edges to eat once home. As Rasha sat with that plate in her lap – Azza only had a small peice – she said, “You never bake these for us!” A fact that I can’t deny… Off to the recipe…

Eggless Nutella Brownie Shortbread Bars

Ingredients

  • FOR SHORTBREAD BASE:
  • 100 gm butter softened
  • 3/4 cup flour
  • 1/4 cup sugar
  • FOR BROWNIE:
  • 1 cup flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 100 gm butter melted
  • 1/2 cup yogurt
  • 1/4 cup Nutella
  • 1 tsp vanilla extract
  • 1/4 cup milk

Instructions

  • Preheat the oven to 180 degrees. Line and grease a brownie pan and set aside.
  • Using a spatula, fold in the flour and sugar into the softened butter till you have a dough. Spread evenly on the pan into a thin layer. Bake for 10 minutes.
  • Meanwhile, prepare the brownie batter. Sift the dry ingredients - flour to salt - into a large bowl.
  • Whisk together the rest of the ingredients till smooth and sugar is well combined. Fold in the dry ingredients and mix till no streaks of dry ingredients are found.
  • Take out the shortbread base and spread the brownie on top of it. Bake for 30 minutes till the top is done to touch.
  • Take out, cool in pan for 10 minutes. Carefully pull out from the pan and cool on a rack completely before slicing and enjoying!
